Curcumin (Turmeric) is derived from a spice that comes from the root Curcuma longa, member of the ginger family, Zingaberaceae (Surh and Chun 2007). It is bright yellow, and has been used as a coloring agent in food in the United States. In India, it has been used for centuries as a spice and as a food preservative, and also for its various medicinal properties (Chainani-Wu 2003). Curcumin is one of the most extensively investigated and well-defined chemopreventive phytochemicals (Surh and Chun, 2007).
